Eggless Cake

Today I tried this eggless plain cake and it came out very good. It was so spongy and so soft and my friends who tasted the cake, couldn't believe it was an eggless cake.... Really you all should try this.

Ingredients:

2 1/2 cups all purpose flour

2 teaspoon baking powder

1 teaspoon baking soda

1 (14 ounce) can sweetened condensed milk

1 cup orange juice

2 teaspoon vanilla extract

1 cup melted butter

1/2 tsp orange zest


Method:

  • Preheat oven to 350 degrees F (175 degrees C). I have used 9x13 inch pan, grease and flour the pan. Keep it aside.
  • Sift the flour, baking powder and baking soda together into a large bowl.
  • Take the mixed flour and make a well in the center and pour all the wet ingredients.
  • Mix well with out lumps and pour into greased pan.
  • Now place it in the middle rack of the preheated oven and bake it for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow to cool on the rack. Once it is cool you can serve it.

Coconut Burfi

Coconut burfi is very common sweet in India. Here is the recipe for the burfi.

Ingredients:

1 full coconut, grated
1 cup sugar
2 tsp ghee
1/2 tsp cardamom (elachi) powder


Method:
  • Grate the coconut if it is in small quantity, you can grate it with the help of grater. If it is in large quantity, you can cut them into small pieces and run it in a mixer for 2 rounds and it should be coarse not paste.
  • Grease the plate and keep it aside.
  • Mix grated coconut and sugar in a bowl and keep it aside for 5 to 10 minutes.
  • Place a heavy bottomed pan on medium heat and add ghee, roast the cashews and keep it aside.

  • Now add the mixture and stir it continuously while keeping the stove on a low flame. Don't burn the mixture keep stirring it. Add cardamom powder to this and mix.
  • You will know its done when sugar in the mixture is melted and coconut starts binding. Don't over cook it will become flaky flaky.
  • Take the greased plate and pour the mixture and tap the plate. Spread evenly with the greased spatula.
  • Cut it into square or diamond shape. Let it cool and serve it.

Potato Wedges

Potato wedges are popular at fast food restaurants, they are tossed with seasonings and oil and baked, which is easy to make and taste delicious. They are perfect for snacks or appetizer, which is crispy outside and soft inside....ummmm yummmmm !!!!! The spices in this recipe can be adjusted to suit your personal tastes.
I made them yesterday evening and surprised my DH. My DH liked it so much even today I am preparing it. ;-) ;-)




Ingredients:

3 large potatoes
1/4 cup extra virgin olive oil
1 tsp salt
1 tbsp red chili powder
1/2 tsp pepper
1/2 tsp dry kasoori methi leaves/Italian seasoning



Method:

  • Preheat the oven to 400 degrees F. Wash the potatoes and pat them dry, cut them into 6 to 7 wedges for each potatoes.
  • Take a bowl and combine wedges with the dry ingredients and olive oil.(Here I have used dry kasoori methi leaves instead of Italian seasoning)
  • Take a baking sheet layered with aluminium foil or parchment paper. Place potatoes skin down in a baking dish.


  • Bake at 400 degrees F for 45 to 50 minutes. Don't burn them.



Serve hot hot with tomato ketchup... ;-)
